Sunday: Family

Treat the family to GINGER-BEER GLAZED CHICKEN, a roasted chicken that has an old but updated Southern-style sticky-sweet caramelized coating. Heat oven to 350 degrees. Remove giblets from 1 (5- to 7-pound) whole roasting chicken; place breast-side up in a roasting pan. In a small saucepan, bring 1 (12-ounce) bottle ginger beer to a boil; continue boiling 10 to 15 minutes or until it is reduced by half. Whisk 1 tablespoon canola oil, 1/2 teaspoon coarse salt and 1/4 teaspoon pepper into reduced ginger brew. Brush half the mixture over chicken. Stuff 1 sliced lemon into cavity. Cover with foil and roast 45 minutes. Remove foil, brush with remaining ginger beer mixture and continue roasting 1 hour 15 minutes uncovered (or until meat thermometer registers 165 degrees in thickest part of thigh), basting with sticky pan juices every 20 minutes. Remove chicken from pan; let stand 10 minutes. Carve, transfer to serving platter and ladle with more pan juices.

Serve with ITALIAN PARSLEY-BUTTERED POTATOES and a RED-TIPPED LETTUCE SALAD. Add WHOLE-GRAIN ROLLS. For dessert, sliced POUND CAKE topped with STRAWBERRIES is easy.

Skip meat tonight and enjoy this POTATO-VEGETABLE FRITTATA. In a medium bowl, beat 6 large eggs and 4 egg whites with 1 teaspoon coarse salt. Heat 1 tablespoon canola oil in a large nonstick skillet over medium. Add 1 (24-ounce) bag frozen O'Brien potatoes, 2 cups frozen petite green peas and 1 (2-ounce) jar drained chopped pimientos. Cover and cook, turning potatoes occasionally, 8 minutes or just until potatoes start to brown. Reduce heat to medium-low. Pour eggs over vegetables, cover and cook 6 to 8 minutes or until eggs have set. Cut into wedges and serve with SALSA.

Add a SPINACH SALAD and toasted WHOLE-GRAIN ENGLISH MUFFINS. Bring out the leftover COOKIES for dessert.

Friday: Kids

Mention the word "hamburger" and the kids will come running for HAMBURGER SOUP. In a large nonstick skillet, cook 1 pound lean ground beef 5 minutes on medium or until no longer pink; drain well. Add 4 cups water, 1 (14.5-ounce) can no-salt-added diced tomatoes with juice, 3 medium sliced carrots, 2 medium diced potatoes, 1/2 cup sliced celery, 4 beef bouillon cubes, 1/4 teaspoon pepper and 1/4 teaspoon dried oregano. Bring to boil. Reduce heat; cover and simmer 15 minutes or until potatoes and vegetables are tender. Add 1 cup frozen green beans. Cover and simmer 15 more minutes or until tender.

Serve with a CHOPPED LETTUCE SALAD and BREAD STICKS. Buy CUPCAKES for dessert.

Sunday: Family

Present the family with savory PORK ROAST WITH APRICOT GINGER GLAZE today. Heat oven to 350 degrees. Combine 2 teaspoons less-sodium seasoned salt and 1 teaspoon dried thyme. Rub on all sides of a 2-pound boneless pork loin roast. Bake 20 minutes per pound or until internal temperature is 145 degrees.

Meanwhile, combine 1/2 cup apricot preserves, 2 teaspoons Worcestershire sauce and 3/4 teaspoon ground ginger. Coat roast with apricot mixture the last 10 minutes of baking. Remove roast from oven and tent with foil; let stand 3 minutes. Slice and serve.

To go with the roast, bake SWEET POTATOES. Slash the tops, and drizzle with a mixture of a little apple juice and cinnamon. Serve with FRESH BROCCOLI and make CORNBREAD (from a mix). Scoop LIME SHERBET for dessert.

Plan

Save enough pork and bake 2 extra sweet potatoes for Monday. Save enough sherbet for Tuesday.

Add 1 (10 3/4-ounce) can condensed low-fat broccoli cheese soup, 1 (16-ounce) can rinsed no-salt-added corn, 1 1/2 cups chopped cooked pork, 2 diced cooked sweet potatoes, 1/2 cup 1 percent milk and 2 beaten eggs. Stir until blended. Bake 25 minutes or until a knife inserted in center comes out clean.

Serve with a SPINACH SALAD and WHOLE-GRAIN ROLLS. For dessert, sprinkle CHUNKY APPLESAUCE with cinnamon.

No need to go to the beach for HAWAIIAN FLANK STEAK when you can prepare it for guests at home. Combine 1 (6-ounce) can pineapple juice with 3 tablespoons honey, 1 tablespoon soy sauce, 2 tablespoons chopped green onions and 1 teaspoon garlic powder in a shallow dish. Add 1 pound flank steak; turn to coat. Cover and marinate 15 minutes in refrigerator. Remove from refrigerator; pour marinade into a small pan; grill or broil steak 10 minutes on each side for medium doneness. Stir 2 teaspoons cornstarch into marinade in pan; bring to boil; boil 1 minute. Stir until hot and slightly thick; serve sauce with steak.

Accompany the tropical-flavored steak with RICE and SUGAR SNAP PEAS. Add SOURDOUGH ROLLS. For dessert, sprinkle toasted COCONUT over leftover ICE CREAM.

Make a family favorite, SWISS STEAK, for today's gathering. Heat oven to 325 degrees. Cut 2 pounds (1/2-inch thick) boneless beef round steak (visible fat removed) into 8 serving-size pieces. Place in a 13-by-9-inch baking dish coated with cooking spray. Sprinkle with 1/4 teaspoon pepper. Top with 1 medium thinly sliced onion, 8 ounces sliced fresh mushrooms and 1 (8-ounce) can no-salt-added tomato sauce. Cover and bake 1 3/4 to 2 hours or until steak is tender.

Serve with your own MASHED POTATOES, GREEN BEANS and MIXED GREENS. For dessert, this CINNAMON APPLE TART is hard to resist.

Sprinkle with 1 cup (2 cups total) shredded reduced-fat cheese blend, half of (1-pound) bag frozen (thawed and drained) pepper stir-fry mix (green, red, yellow peppers and onions) and the other 1 cup cheese. Bake 15 minutes or until crust is crisp and cheese is melted and bubbly. Slice and serve with a SPINACH SALAD. How about PEACHES for an easy dessert?
