Sunday: Family

A great way to celebrate family day is with GRILLED FLAT-IRON STEAKS. On the side, add CORN-ON-THE-COB, a MIXED GREEN SALAD and CRUSTY BREAD. Buy a COCONUT CAKE for dessert.

Cook 2 extra ears of corn, and save 2 steaks and some cake for Monday.

GRILLED FLAT-IRON STEAKS

Servings: makes 8 servings

Prep time: 10 minutes; marinating time: 30 minutes

Cook time: 10 to 14 minutes

  • 2 tablespoons cumin
  • 2 large cloves garlic, minced
  • 2 teaspoons brown sugar
  • 1/2 teaspoon lime zest (green part only)
  • 1/4 teaspoon cayenne pepper
  • 4 beef shoulder top blade (flat-iron) steaks (see Note)
  • Lime wedges

Combine cumin, garlic, sugar, zest and pepper; mix well. Press cumin mixture into steaks. Cover and refrigerate 30 minutes. Grill, covered, 10 to 14 minutes for medium-rare to medium doneness; turn occasionally. Cover and refrigerate 2 steaks for Monday. Carve remaining 2 steaks into slices. Squeeze lime wedges over steaks as desired, and serve.

Note: Use one boneless beef top sirloin steak, cut 1 1/2 inches thick, if desired. Grill 22 to 26 minutes.

Monday: Heat and Eat

Use Sunday's leftovers for STEAK SALAD. Toss packaged salad greens with leftover corn kernels and steak slices, some crumbled blue cheese, halved grape tomatoes and avocado slices. Add WHOLE-GRAIN ROLLS. Slice the leftover CAKE for dessert.

Tuesday: Budget

For a low-cost meal, try TROPICAL PORK BURGERS. Heat grill to medium-high. Combine 1 pound lean ground pork, 2 tablespoons teriyaki stir-fry sauce and 2 sliced green onions. Form into 4 (4-inch) patties. Coat patties, 2 quartered green bell peppers, 4 whole green onions and 4 (1/2-inch-thick) slices fresh pineapple with cooking spray. Grill patties and peppers, turning twice, 8 minutes or until lightly charred. Brush with more teriyaki sauce. Add green onions and pineapple to grill. Grill everything 2 more minutes, turning often, until internal temperature of the burgers is 165 degrees and vegetables and pineapple are tender. Serve with BAKED BEANS and WHOLE-GRAIN SANDWICH BUNS. MANGOES will taste great for dessert.

Wednesday: WILD CARD

Enjoy Atlanta's Mexican chef Eddie Hernandez's MEATLOAF WITH TOMATO-HABANERO GRAVY for a new take on an old favorite.

For the gravy: Place 1 1/2 pounds tomatoes and 1 habanero or jalapeno pepper in a large saucepan. Cover with water and bring to boil on high heat. Boil just until tomato skins start to crack. Drain in a colander. Remove stems from peppers. Transfer tomatoes and peppers to blender and puree until smooth. In a medium saucepan over medium heat, melt 1 tablespoon butter. Add 1/4 cup finely diced onion, 1 clove crushed garlic and 1 teaspoon coarse salt; cook 3 to 5 minutes or until onion is softened. Add tomato puree. Cook 3 more minutes or until slightly thickened. Taste and adjust seasonings; serve with meatloaf. Of course, you'll want MASHED POTATOES and STEAMED ASPARAGUS alongside. For dessert, STRAWBERRIES are in season.

  • 1 tablespoon butter at room temperature
  • 1 1/2 pounds ground pork
  • 1 1/2 pounds lean ground beef
  • 1 cup finely chopped onion
  • 1 cup finely chopped celery
  • 1 jalapeno pepper, minced, with stem and membranes removed
  • 1 clove garlic, minced
  • 1/2 cup minced fresh parsley, plus more for garnish
  • 1 teaspoon fresh thyme leaves
  • 1 1/2 teaspoons coarse salt
  • 1/2 cup cornstarch

Heat oven to 425 degrees. Rub bottom and sides of an 8 1/2-by-11-inch baking dish with the butter; set aside. Mix remaining ingredients in a large bowl thoroughly to combine. Pat meat mixture evenly into the prepared dish. Bake 35 to 40 minutes or until meat reaches an internal temperature of 165 degrees. Garnish with parsley. Enjoy LENTIL SOUP for a no-meat dinner. Heat 1 tablespoon olive oil in a large pan on medium-high. Add 1 medium chopped onion; cook 5 minutes, stirring occasionally. Stir in 1 chopped carrot, 1 chopped red bell pepper and 5 cloves sliced garlic; cook 3 minutes. Stir in 5 cups water, 1 cup dried lentils, 1 (28-ounce) can crushed tomatoes, 2 bay leaves, 2 tablespoons balsamic vinegar, and coarse salt and pepper to taste. Bring to a boil; reduce heat to low and simmer, uncovered, 25 to 30 minutes or until lentils and vegetables are tender. Remove bay leaves. Serve with GRILLED TOMATO AND CHEESE SANDWICHES. PLUMS are for dessert.

RICE-STUFFED FLOUNDER WITH BROCCOLI

Servings: makes 4 servings

Prep time: 20 minutes

Cook time: about 45 minutes; cooling time for rice: 10 minutes

  • 1 (6-ounce) package long-grain and wild rice
  • 1 cup small fresh broccoli florets
  • 1 green onion, thinly sliced
  • 1/2 teaspoon dried tarragon
  • 3 tablespoons low-fat mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 egg yolk
  • 3/4 cup grape tomatoes, halved
  • 4 (6-ounce) flounder fillets
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon coarse salt
  • 1/8 teaspoon pepper
  • 8 thin slices lemon
  • 3/4 cup white wine or water

Discard seasoning packet from rice; cook rice according to directions, but without oil or butter. Add broccoli, green onion and tarragon the last 10 minutes of cooking, or cook until rice is tender and water is absorbed. Remove from heat; cool about 10 minutes. Reserve 3 cups for now; freeze any remaining rice. Meanwhile, in a medium bowl, mix together the mayonnaise, mustard and egg yolk; set aside. When rice has cooled, add it, along with the tomatoes, to mayonnaise mixture; stir to blend. Heat oven to 400 degrees. Coat a 9-by-13-inch baking dish with cooking spray.

To assemble: Place one fillet in dish. Spoon a scant 2/3 cup rice mixture onto one half of fillet; fold other half to cover. Repeat with remaining fillets. Secure with wooden picks if necessary. Sprinkle with paprika, salt and pepper; top each fillet with two slices lemon. Add wine or water to pan. Bake 20 minutes or until fish is opaque and flakes easily with fork. (Filling should be 160 degrees.) Remove to plates with large spatula. Serve immediately.

Sunday: Family

Take it easy and prepare a SMOKED TURKEY BREAST for family day. Alongside, SUMMER GREEN BEAN AND CORN SALAD is delicious. Add more color to the plate with a real summer favorite, SLICED TOMATOES AND FRESH BASIL, and some WHOLE-GRAIN ROLLS.

No one will be able to resist PEACH CRUMBLE for dessert: Heat oven to 350 degrees. Peel and slice 12 peaches (about 3 pounds) and combine with 1/4 cup white sugar; spoon into a 3-quart baking dish coated with cooking spray. Combine 1/2 cup flour, 1/3 cup packed light brown sugar, 1/2 teaspoon nutmeg and 3 tablespoons cold butter in a medium bowl. With 2 knives, cut butter into flour mixture until it resembles coarse bread crumbs; scatter over peaches. Bake 40 to 45 minutes or until golden; serve warm.

SUMMER GREEN BEAN AND CORN SALAD

Servings: makes 6 servings

Prep time: 15 minutes

Cook time: 5 minutes; cooling time: 30 minutes

  • 1 teaspoon coarse salt
  • 2 pounds fresh green beans, trimmed
  • 1/4 cup Thai fish sauce
  • 1/4 cup fresh lime juice
  • Zest of 2 limes
  • 1/4 cup honey
  • 1/4 cup extra-virgin olive oil
  • 1 cup fresh corn kernels (about 2 large ears)

In a 3-quart saucepan, bring 2 quarts water and the salt to a boil. Add beans; cook 5 minutes. Drain and place beans in a large bowl of ice water. Drain again and place beans in refrigerator to cool for 30 minutes. In a small bowl, whisk together the fish sauce, juice, zest and honey. Slowly drizzle the oil into the dressing while constantly whisking, until dressing is emulsified. Add the corn kernels to the beans. Pour dressing over salad, toss and serve. Reserve half for dipping. Add 1 pound chicken strips to remaining half mixture; stir to coat. Roll strips in 1 cup crushed corn flakes. Bake 12 minutes or until chicken is no longer pink. Serve with reserved honey-mustard sauce. Add BAKED BEANS, CARROT STICKS and SOFT ROLLS. Bite into a NECTARINE for dessert.

Thursday: Meatless

We enjoyed these BELLA BURGERS for a meatless dinner. Heat grill to medium-high and coat both sides of 4 large portabella mushrooms, 1 large red bell pepper cut into quarters and 1 sliced red onion with cooking spray. Grill the vegetables on both sides, about 4 to 6 minutes or until lightly charred and tender. Meanwhile, whisk together 2 tablespoons reduced-fat Italian dressing with 2 tablespoons low-fat mayonnaise. Spread hamburger buns with dressing mixture. On bottom bun, layer lettuce, tomato, mushroom, peppers and onion. Cover with top bun. Serve immediately with STEAK FRIES (from frozen). Scoop VANILLA ICE CREAM for dessert.

  • 1 large yellow or white onion, chopped

  • 2 teaspoons ground ginger
  • 1/4 teaspoon coarse salt
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons unsalted creamy peanut butter
  • 2 (14.5-ounce) cans diced fire-roasted tomatoes, undrained
  • 1 1/2 cups thinly sliced fresh spinach (chiffonade)
  • Chopped peanuts for garnish

Add 1 teaspoon oil to a Dutch oven on medium heat. Add chicken; cook 1 1/2 minutes; toss and cook 1 1/2 more minutes. Remove chicken to plate and cover to keep warm; set aside. Pour remaining oil into pan; add onion, peppers and garlic. Cook 4 to 6 minutes, stirring often. Reduce heat to medium-low; add ginger, salt and cayenne pepper and stir. Add peanut butter; stir to combine and cook 30 seconds. Add tomatoes; bring to a boil, then add chicken and accumulated liquid back to pan. Bring to a boil again; reduce heat to low and simmer 20 minutes until internal temperature is 165 degrees and sauce is reduced and thickened. Spoon into 4 bowls; garnish with spinach and peanuts.   • 1 medium (about 1 pound) whole cauliflower
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon ground mustard
  • Coarse salt and black pepper to taste
  • 1 cup 2 percent milk
  • 1 cup 50 percent reduced-fat sharp cheddar cheese, freshly grated
  • Paprika for garnish

Remove outer leaves and trim stem next to cauliflower. Wash; place in a 9-inch pie plate. Cover with wax paper; microwave on high (100 percent power) 6 to 8 minutes. Let stand 5 minutes. Meanwhile, melt butter (covered) 1 minute on high in a large microwavable bow. Blend in flour and seasonings. Stir in milk; cover and microwave on high 2 to 3 minutes, or until thickened, stirring every minute. Add cheese; stir to blend. Place cauliflower on serving plate; pour sauce over top and garnish with paprika. Serve immediately. HAM-STUFFED POTATOES

Prep time: 15 minutes

Cook time: 40 to 50 minutes

  • 4 (10- to 12-ounce) baking potatoes
  • 1 tablespoon butter
  • 3 cups chopped leftover ham (see NOTE)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup reduced-fat sour cream
  • Coarse salt and pepper to taste
  • Freshly grated parmesan cheese for garnish
  • Chopped fresh chives for garnish

Heat oven to 350 degrees. Microwave potatoes 15 to 18 minutes on high (100 percent power). Let stand 3 minutes. When potatoes are cool enough to touch, halve them lengthwise. Scoop out pulp and place in a bowl, leaving shells intact; set shells and pulp aside. Melt butter in a medium skillet over medium-high heat; add ham, onion and garlic; cook 5 minutes or until onion is softened. Mash potato pulp; stir in ham mixture, sour cream, salt and pepper. Stuff shells; sprinkle with some parmesan cheese. Place potatoes in a 9-by-13-inch baking dish. Bake 25 to 30 minutes or until hot. Garnish with chopped fresh chives and serve.

Tuesday: Kids

The kids will be happy when you prepare CHICKEN TACOS. In a small bowl, mix 1/3 cup low-fat mayonnaise, 1 teaspoon cumin and 2 tablespoons salsa; set aside. Combine 2 cups shredded cooked chicken and 1/2 cup more salsa; microwave on high (100 percent power) 1 minute or until hot. Fill taco shells with chicken mixture, shredded lettuce, shredded reduced-fat Mexican-blend cheese and fresh cilantro leaves to taste; drizzle with sauce. Serve with CARROT SALAD. WATERMELON SLUSH for dessert is all about the kids. In a food processor, blend frozen chunks of watermelon with sugar and fresh lemon or lime juice to taste; process until smooth. Serve immediately.

BRATWURST WITH PEPPERS AND ONIONS

  • 2 large red bell peppers, cut into strips
  • 1 large yellow bell pepper, cut into strips
  • 2 large sweet onions, cut into strips
  • 1 tablespoon olive oil
  • 1/4 teaspoon freshly ground black pepper
  • 6 uncooked bratwurst sausages (about 1 1/2 pounds)
  • 6 hoagie rolls, split and lightly toasted

Heat oven to 375 degrees. In a large bowl, toss together the bell peppers, onions, oil and black pepper; spread in an even layer on a heavy-duty foil-lined baking sheet lightly coated with cooking spray. PAN-ASIAN ORANGE POACHED FISH

Servings: makes 4 servings

Prep time: 15 minutes

Cook time: about 20 to 25 minutes; standing time: 2 to 3 minutes

  • FOR THE POACHING LIQUID:
  • 1 3/4 cups orange juice
  • 1/4 cup fresh lime juice
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons packed brown sugar
  • 2 tablespoons minced green onion
  • 2 tablespoons packed minced fresh ginger
  • 1 tablespoon packed minced garlic
  • 1 tablespoon packed minced fresh cilantro
  • FOR THE FISH:
  • 4 (4-ounce) pieces mahi-mahi or other firm white fish, such as halibut
  • 2 cups broccoli florets

In a large saute pan or skillet, combine all ingredients for poaching liquid. Bring to a boil and simmer 10 to 15 minutes, or until slightly reduced. Place fish, skin side up, in pan. Poach (see Note) on low heat, uncovered, for 5 minutes. Turn fish, cover and poach 2 to 3 minutes more. Add broccoli, cover and poach 2 to 3 minutes. Remove pan from heat and let sit covered 2 to 3 minutes. Serve immediately.

Note: To poach is to cook food gently in a liquid just below the boiling point.

Per serving: 125 calories, 23 grams protein, 1 gram fat (7 percent calories from fat), 0.2 gram saturated fat, 6 grams carbohydrate, 83 milligrams cholesterol, 213 milligrams sodium, 1 gram fiber.
