Skip the plastic sandwich bags when making a sandwich for lunch. Instead, choose from three options (ranked from greenest to easiest): a hard plastic lunch box, wax paper or aluminum foil. The lunch box is reusable over and over, but if you're forgetful, you'll probably lose it. If so, wrap sandwiches in biodegradable wax paper or recyclable aluminum foil. All are good choices; choose what's easiest for you and your PB&J.

A chef's trick to keeping baking sheets spotless is to line them with parchment paper. Parchment paper is a silicone-coated baking paper that feels like thick tissue paper; it withstands heat and is nearly stick-proof. Look for unbleached parchment paper; it's brown and free of chlorine bleach. You can also use parchment paper to wrap sandwiches and cover cutting boards when slicing meat to avoid cross-contamination.
